Lemon Poppy Seed Loaf

With vibrant lemon and that added crunch of poppy seed, this lemon poppy seed loaf is sure to become a favourite in your spring kitchen. Light and deliciously moist, paired with a sweet glaze, bake your way into the summer with this irresistible dessert - ideally paired with an icy lemonade or packed for your picnic!

Ingredients:
- 1 bag, remove ½ cup Crave Vanilla Cake Mix
- 3 eggs
- ⅓ cup canola oil
- 1 cup sour cream
- 2 tbsp poppy seeds
- 2 tbsp lemon juice, freshly squeezed
- 2 tbsp lemon zest
- ½ tsp vanilla extract
- 2 tbsp freshly squeezed lemon juice
- ½ cup icing sugar

- 8 x 5-inch loaf pan
- 1 Medium Bowl
- 1 Large Bowl
Directions:
- Position a rack in the centre of your oven and preheat it to 3500F. Butter an 8 x 5-inch loaf pan and line it with parchment paper.
- Remove ½ of the Vanilla Cake Mix and empty the remainder of the mix into a medium-sized bowl.
- In a large-sized bowl, add the eggs and oil. Vigorously mix with a whisk until pale in colour. Add in the sour cream, poppy seeds, lemon juice and lemon zest. Mix with a whisk until combined.
- Using a spatula, gently fold the cake mix into the wet ingredients until just combined.
- Transfer the batter into the prepared loaf pan. Bake for 60-70 minutes or until a probe thermometer inserted into the centre of the loaf reads 200°F.
- Allow the loaf to cool in the pan for 10 minutes, the remove it from the pan and transfer it to a wire rack to cool completely before glazing.
- While the loaf is cooling, prepare the glaze by mixing the icing sugar and lemon juice in a medium-size bowl until it is smooth.
- Using a silicone pastry brush, brush the top and sides of the loaf with the glaze. Allow the glaze to set before serving.
